Peanut Butter Nicecream Vegan Cheesecake

Make the Base

– 2 That's it. Apple + Cinnamon Fruit Bars

– 1/4 cup of rolled oats

– 2 pitted dates

– 1 tbsp of almond butter

Process in a food processor until it’s soft and crumbly. Set aside 1/2 cup for the middle layer and divide the rest into 6 cupcake holders or a small cake pan lined with parchment paper. Press down to create a solid base.

Make the Middle Layer

– 1/2 cup of base (from above)

– 2 chopped frozen bananas

– 1 tbsp of peanut butter

– 1 tbsp of almond milk

Process in food processor until smooth and creamy. Layer on top of the base. Freeze cakes for 15 minutes.

Top with jam or enjoy as is. I used cherry jam and chopped walnuts. Store the rest in the freezer and thaw for 10-15 minutes before devouring.
